If I understand your question, yes, these could be hung with your own bracket instead of the supplied mounting bracket that screws into the wall. You'd have to use/supply your own bracket because the mounting bracket that comes with the shelf is engineered for floating shelves. But, you'd probably want a solid piece of wood for hanging with a bracket instead of these hollow shelves made of "3/16 boards.

Q: will the whole that is left in the wall be larger than a dime?

If you use drywall anchors they will be the size of the anchors. The screws a smaller than a dime and the anchors will be smaller than dime or they would show out the top of the shelf.

Q: Are these shelves hollow so wires can be stored inside?

No there isn’t a way to store wires inside
