Homemade lemon marmalade... from a can
I've been so glad of this, as recently lemon marmalade seems to have completely disappeared from the local shops and to have disappeared/ramped up in price elsewhere. My Dad loves marmalade - in pretty much all of its guises - and had asked for a replacement jar of lemon. I couldn't find any. Lime marmalade and lemon and lime have still been available, but stand alone lemon seems to have completely disappeared with both of the major brands I'd have expected to find (Robertson's Silver Shred, and Rose's) no longer available, and no own brand alternatives. Online versions seemed... pricey. Then I found this. It's really easy to make (just add sugar and water), and seems to be a really good product.I made it following the instructions printed on the side of the can, including the boil time and plate (put in the freezer in advance) test. I had a sugar thermometer in the pan and at the point when this had boiled for the recommended length of time, my thermometer was several degrees below the 'set' point for a jam... lemon marmalade with more than usual natural pectin may well have a lower set point. Certainly the plate test showed this to be well set, and my cooled jars have proved to be just right. I hadn't tried marmalade in yonks, but this is really nice - tangy and well-balanced, with a nice quantity of rind and bags of flavour. Have bought another can for my store cupboard - this has a best before date of a little over 2 years' time!

Tasty, zingy marmalade
Love this marmalade. Started making it when I couldn't get a lemon marmalade in the supermarket. Much better flavour than the well known brand! So easy to make and I won't go back to the ready made now
